Picture Post: Breakfast!

I’ve been completely into Lego Marvel Super Heroes the last few days and have slacked on my blogging duties … so today is a picture post!  And who doesn’t love breakfast?  (Yes, I’m one of those people that drowns their whole plate in syrup.)  Now that I look at it this picture is actually making me hungry.

Lasagna

Because I’m a dumbass (and a masochist, apparently), I thought “hey, let’s make homemade lasagna!  It’ll be fun!”

Fun.  Yeah.

I mean, okay, it was fun, but holy crap.  My kitchen was destroyed and I was a basketcase by the time I realized dinner was going to be an hour and a half late, but it was delicious!  I have notes for what to do next time, and it was definitely worth it.

I made the meatballs, the sauce, and the pasta from scratch.  This blog post is going to be huge because there are so many components to it, but if you have the time (or are smart and make the meatballs and sauce the day before!), you end up with a thoroughly delicious dinner.  Hit the jump for all the recipes and more pictures!

Cafe Mocha

Gooooooooood morning!  What are mornings for?  Mornings are for coffee!

I loooove coffee, so when I got engaged, I put a really awesome espresso machine on my wedding registry, juuuuust in case someone decided they really, really liked me.

Much to my surprise, a box showed up in the mail some weeks later, bearing this:

My friend Anissa (who makes some seriously lovely scarves; you should check her out) gave me basically the best present ever.  I’ve played with it from time to time, but between the pot and the Keurig, the espresso machine is just so much work!  xD

I finally decided it had been sitting on the counter long enough, and have decided that I’m going to learn how to make delicious coffee drinks without having to go to Starbucks (bonus: I don’t have to put on pants or make myself presentable!).  First on the list, because I love coffee and I love chocolate and they’re especially good together, was a cafe mocha.  Hit the jump for the recipe and more pictures!

Pelau

Pelau (prounounced “pay-law”) is a wonderfully delicious dish from Trinidad that I’m excited to share with you all today.

My husband’s maternal side of the family has Triniadian roots, and when I had to do a cuisine exploration class when I was in culinary school, I leaped at the chance to check out food I’d never had before – my knowledge of Caribbean food before that class basically amounted to “jerk chicken” – and the chance to get in good with my mother-in-law, who is a lovely woman … and who doesn’t want their mother-in-law to like them, right?  🙂

I’ve tried quite a few recipes from Simply Trini Cooking, and have liked all of them thus far, but pelau is definitely my favorite.  I serve it with homemade coleslaw, and it’s even better the next day.

Funeral Potatoes

Were you looking on the internet today, thinking “man, I have no idea what to make for dinner, but I hope it has lots of cheese, crunch, and calories?”  If so, this is the post for you!  This will probably be the most unhealthy post I ever make.  Seriously, these things are soooooo unhealthy.   But they are soooooo good.

Funeral potatoes are a staple at basically every Mormon gathering I’ve ever been to.  They are cheesy, melty, gooey deliciousness that have nothing even remotely healthy in them.  But they smell great when they’re baking, and they taste even better the next day (if you end up with leftovers, LOL).
